I was diagnosed with Celiac Disease in the fall of 2019. Although I had wonderful doctors at the time, the only advice I was given was to "Stop eating gluten." My visit to the recommended nutritionist felt incomplete and left me feeling completely alone, confused and scared - and HUNGRY! You don't want to know how many gummy bears I ate at this stage in my life. After reading as much information as I could find, I began to slowly figure out how to eat safely and live a (mostly) normal life without gluten.
So far "the team" is me. I'm sure I'll have help and insight from others as we go along!
